The Baking program at VIU was an excellent exposure to the wise set of skills one can actually make use of in a real world bakery situation. As well as the technical aspects of baking and pastry we were taught, there was also a thorough education in the theories and science behind much of what happens when you bake. Our teachers, Mr. Barnett and Chef Harper, were thorough and patient, taking us from mere novices to experienced new bakers. I cannot say enough good things about the staff and their dedication to their art. From this course I was able to immediately get a position as a bread and pastry baker in a local establishment where I find myself using the skills I learned at VIU every day. It is a rewarding profession that I am very happy to have gone into and am proud to be part of.
